The Mesta Tenga, or Rosella flowers (Hibiscus sabdariffa)?is a local herb, species of Hibiscus flowers. It is also known as Tenga Mora. Mesta tenga can be found in in the deep wild forests in Northeast India. Traditionally, the tribes based in Assam and Nagaland use it. The plant can grow approximately to 2.5m. Its flowers are white to pale yellow with dark red spots. As the fruit matures and ripens, skin colour becomes bright red. Besides its gastronomic uses, this local herb has also medicinal properties. It helps in blood pressure reduction in hypertensive patients. Mesta Tenga is available for sale only on special occasions. Deforestation and its low value to producers lead to its decline in its production. It starts to disappear. Moreover, new generation possess little knowledge or are not aware of Mesta Tenga existence and its utility in the kitchen.
The Mesta Tenga is used in preparation one of the most traditional dishes from Assam, Masor Tenga (or Sour Fish). Its leaves can be also cooked with chicken, crab or pork. The fruits are perfect base for delicious jelly.
